Mexico is the ninth largest country of the world to produce coffee. The area for the production of coffee is 703,341 acres. And there are 401,221 producer of coffee in Mexico. Chipas, Oaxaca and Veracruz are the most important places for the production of coffee in Mexico. The farm of coffee offers great opportunities for the rural development.

The shaded coffee plantations is half of the all the forest reserves in Mexico. The plantation of coffee has spread from the southern part of the country. Veracruz is the states where lowland coffee is produced. The coffee of Chiapas is grown in the mountain of southeastern corner of Mexico. The fine quality of Mexican coffee is like to a light white wine. It is flimsy in body with pleasantly dry.

The recipe of Mexican coffee, first in the daguiri glass tequila is poured into it. Then add hot coffee and leave room at the top in to order to spray whipped cream, and then sprinkle a shot of cacao liqueur on top. So it becomes a superb drink.

There is a new project for the women of Mexico to empower them in the production of coffee. The cooperative of women the organic shade grown coffee and the area available for the cultivation is 300,000 acres. It is from perennial tropical forest to high altitude forest.

The Mexico specialty coffee association was launched in to order to increase the quantity and improve the quality of coffee. The coffee was exported more in 1996/97, which result in the shortage of coffee in the domestic market and the local processor and roaster were unable to obtain the local demand.

The encounter for the quality of coffee was held by the Mexican conferation of coffee growers and Huatulco association hosted the event. This event was supported by the Mexican coffee council, a government institution. In the event, they focus the quality of coffee, the method to enhance it and the way to enter the gourmet market.

The roasted coffee is sold in two sized bags and sealed to avoid any entrance of air into bag because the roasted coffee releases gas. The roast level is also categorized into light roast, city roast, French roast and Italian roast.
